III Level italian cooking
This course is comprised of 50 hours of lessons in total, with weekly three hour long lessons.
The content of the course includes multiple more advanced cooking skills, techniques and principles. For example, participants will study legislation and rules regarding nutrition, how to create healthy dishes and dealing with allergies and food intolerances. Furthermore, they will learn about food presentation and how to decorate a dish, side dishes and varieties of cold and hot dishes. There will also be lessons on different types of cooking, for example, boiling, braising, stewing, frying, steaming, stir-frying, baking, roasting and grilling. Finally, the course includes lessons on service, timing the output of meals from the kitchen, and preparing food according to the needs of the customers.
The different levels of the courses are organised according to skill and knowledge level as the European Regulation requires (EQF levels).The training agency will give a certificate accredited by the region of Tuscany.
