I Level italian Pastry-Making
The students are going to learn how to elaborate “dough per excellence”: we offer variations for salt and non-salt lovers.
We guarantee several pauses to allow the participants to reconsider how to create hand-sized pastry. During the whole cooking process we pay special attention to certain moments: the kneading phase, baking in different ovens depending on what the participants are baking (wood, electric, gas), and shaping the dough, both with and without molds. Furthermore, we follow up the process learning about temperature and humidification aspects according to the type of pastry.
Moreover the courses are classified into levels built upon the ability and knowledge as request by the European Regulations (EQF levels).
At the end of the course the involved participants are awarded by the training agency which is well recognize by the Tuscany Region.
