20 lessons of Italian, Monday – Friday
With our courses in cookery, it is possible to learn the preparation techniques for typical dishes in the Tuscan cuisine, and more generally, in that of the whole of Italy.
In small groups, the participants will familiarise themselves with delicious recipes, using simple and natural ingredients, according to the genuine traditions. The participants will be provided with all of the appropriate equipment for their development in the lessons, and at the end of the course will receive a certificate of attendance.
The courses, with a total of 6 hours of lessons per week (2 lessons of 3 hours), can last either 1 or 2 weeks, provided that there is a minimum of 2 participants and a maximum of 5 participants per class. |

1 Week Course:
Fish
Get to know and learn how to prepare various types of fish. Starters, pasta and rice dishes, main dishes, the preparation of all types of seafood.
Tuscan Cuisine
A course dedicated to the region of Tuscany, in order to learn about the traditional preparation techniques of local recipes, for example, Ribollita, Baccalà, Zuppa di Farro, Crostini and typical desserts.
Homemade Pizza and Focaccia
A course dedicated to the preparation of pizza, focaccia and bread sticks, in order to learn the techniques used in the preparation of the pastry, the rising process and the cooking process.
Course in the Basics of Pastry
A course on the preparation of puff pastry, short crust pastry, cream puff and fruit cakes and biscuits.
Course in the Basics of Ice Cream
Techniques for making a wide range of flavours of ice cream, including personalised recipes. |
2 Week Course:
Course in the Basics of Cuisine
Techniques for the preparation and choice of ingredients for starters, mains and desserts.
Regional "Primi Piatti"
The course is dedicated to the cuisine of the north, central and south of Italy. In each lesson, typical dishes from every region will be prepared, for example, spaghetti with carbonara, trenette with pesto or linguine “alla Viareggina”.
“Primi Piatti“ in the Oven
4 lessons aiming to achieve an understanding of how to use the oven for the preparation of “primi piatti”, from for example, lasagne to cannelloni.
“Secondi Piatti” in the Oven
4 lessons aimed to achieve an understanding of how to use the oven for the preparation of “secondi piatti” such as roasting meats and cooking fish, but also kebabs of fish and vegetables. |
