III Level italian Pastry-Making

This course is composed of 50 hours in total which means that weekly there are 3 hours of lessons. The involved students will learn to bake dough with and without yeast, classic cakes and wedding cakes.

In the course we will consider how to bake without yeast. For instance traditional bignè, sweet puff pastry, a sponge cake called “Pan di Spagna” and some marvellous biscuits. Additionally, we will investigate biscuits variations such as Krumiri, Macaroons, Ricciarelli, Bruttiboni and many more.

Furthermore, we will concentrate on typical Tuscan pastries recovering ancient recipes while we use organic and natural products.

Another unavoidable aspect is the chocolate preparation that includes the elaboration of mousse, chocolate creams and cakes and chocolate fillings combined with fruit. Last but not least we will study the process of sugar paste looking at icing, royal icing, and marzipan’s importance.

Moreover the courses are classified into levels built upon the ability and knowledge as request by the European Regulations (EQF levels). At the end of the course the involved participants are awarded by the training agency which is well recognize by the Tuscany Region.

II Level italian Pastry-Making

In this course we deal with fresh ice creams and pastry.

In particular, we will learn how to distinguish and treat desirable sable dough, extraordinary puff pastries as well tempting milk, ice and butter creams. Persuaded by a mix between hunger and artistic attitude we are going to frost cakes adding on the top some crunchy sprinkles.

After having studied the basics we will study general pasteurization and creaming processes. Following the correct fruit preparation we are going to cook at the necessary steps for sorbets like its half frozen condition, essential ingredients and weighing.

Moreover the courses are classified into levels built upon the ability and knowledge as request by the European Regulations (EQF levels). At the end of the course the involved participants are awarded by the training agency which is well recognize by the Tuscany Region.

I Level italian Pastry-Making

The students are going to learn how to elaborate “dough per excellence”: we offer variations for salt and non-salt lovers.

We guarantee several pauses to allow the participants to reconsider how to create hand-sized pastry. During the whole cooking process we pay special attention to certain moments: the kneading phase, baking in different ovens depending on what the participants are baking (wood, electric, gas), and shaping the dough, both with and without molds. Furthermore, we follow up the process learning about temperature and humidification aspects according to the type of pastry.
